They're no bigger than a small marble
Inside the buds are packed tightly eager to explode
Several couldn't wait any longer and are star shaped beauties
This is Petasites Japonicus.
It is also known as Fuki, Bog Rhubarb and Giant Butterbur
It's is a perennial native to Japan, China and Korea.
There parts of the plant make it onto the dinner table after proper preparation
What starts as a tiny clump of fragrant flowers shoots up three feet
And it grows 30 inch leaves
Talk about energy!
