Chicory lives by the roadside
The soil is sandy, rocky and dry
It survives because it's able to adapt to harsh conditions
That's also true of humans
During the American Civil War, the Great Depression and World War Two coffee was scarce
People used baked, ground Chicory root as a coffee substitute
It's still used as a coffee additive in many parts of the world including New Orleans
